The morning time is my absolute favorite time of the day. The first thing I do when I wake up is have my cup of coffee. I’ve been making it a ritual on Sundays to bake my famous Blueberry Muffins. Not only do they taste delicious, but they are a healthy treat to start the day!

Ingredients (set oven to 350′)
- 2 ripe bananas
- 2 eggs
- 1 tbsp vanilla extract
- 1/2 cup coconut sugar
- 1 tbsp coconut oil
- 2 cups oats
- 1 cup almond flour
- 1.5 cups gluten free flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup blueberries
Directions
Mix together bananas, vanilla extract, eggs, coconut sugar and coconut oil. Once combined, mixture should be liquidy. Add almond flour, gluten free flour, oats, baking soda and baking powder. Add blueberries to finish. If the muffin batter is too liquidy, add more gluten free flour. If the mixture is too thick, add a splash of alternative milk. Pour mixture into muffin tray (makes about 6 muffins). Bake at 350′ for about 20 minutes or until toothpick comes out clean.
